S.O.1 - THE APPROACH

S.O.1 is a micro-roastery based in Melbourne, Australia. I focus on seasonal, bright and juicy single origin coffees, all roasted in small batches. Extreme care is taken to ensure every bag that leaves the lab is exactly how it should be. The coffee will not go out if it's not hitting my expectations. I cup every single batch numerous times, at various periods— day 1 post roast, then essentially every week after to figure out where each coffee peaks in flavor. This is a study of flavor, balance, harmony. The process of analysing and roasting and tasting— repeat. Creating roasts that tiny bit better each time. Incremental, continuous improvement to achieve the best possible outcome. Constant evolution.

I rely solely on talented and hardworking people on the origin side of the supply chain— coffee producers and farmers and their families, to allow this process to take place.

None of this would be possible— none of this delicious coffee, without the producer. I'm just trying to add some heat to it and get the fuck out of the way.

S.O.1 BEGINNING - FOUNDED IN 2026

I started S.O.1 out of the pure love of coffee. Slow mornings. Intentional brewing. Juicy, sweet cups. Coffee that taste like peaches and berries and a fist full of flowers.
