HOW DO YOU ROAST?

SUM OF ONE coffees were selected and roasted with filter brewing in mind. We roast these coffees light with the intention of them being bright, clean and complex. We try to roast in a way that puts on display the unique characteristics of the coffee and origin.

Basically, we try to add some heat to the coffee and stay the fuck out of the way and not mess it up.

While SUM OF ONE coffees were crafted for filter brewing, if you have a really good espresso machine and grinder they may work great as expressive espresso.

HOW LONG SHOULD I REST MY COFFEE

We recommend letting our coffees rest for at least 10-14 days. This is just when the coffee starts to open up and show what it has to offer. From there it'll continue getting better for up to 45 days with the coffee peak flavor somewhere around day 30. Your un-opened bag of S.O.1 coffee will stay tasty for around 3 months, sometimes even longer!

WHERE DO YOU SOURCE YOUR COFFEE

We purchase coffees from all over the world, essentially any origin we can get my hands on— if we love it on the cupping table, we will buy it no matter the origin. We work with a small number of green coffee importers who work directly with coffee producers around the world. Most of these green importers are B-CORP certified.

WHAT RECIPE SHOULD I USE?

Each coffee page has a brew recipe section— head over there and check them out. We generally recommend a very similar recipe for each coffee, adjusting only grind size and water temperature.
